Every time you prepare a sparkling cocktail (drink made with sparkling wine and fruit), be very careful with the abundant foam created by the reaction of the sparkling wine with the fruit’s fibre. The foam can pour out over the sides and make a mess. To prevent this, first put in the fruit and then, very slowly, add the sparkling wine, gently stir from time to time to break up the foam as it starts bubbling up.
