Technical Procedure
Prepare the mix:
Combine all the ingredients in a bowl, ensuring a smooth, homogeneous mixture with no lumps. Cold ingredients help maintain both effervescence and foam stability.
Fill the siphon:
Using a funnel, pour the mixture into the container without exceeding the maximum fill line.
Seal tightly:
Screw on the head firmly and ensure it is properly secured.
Charge with gas:
Insert a CO₂ cartridge for sparkling cocktails or an N₂O cartridge for soft, creamy foams. Shake the siphon upright to distribute the gas evenly.
Chill and stabilise:
Store the siphon in the refrigerator, horizontally, for at least 30 minutes—or several hours, depending on the complexity of the preparation. This allows internal pressure to balance and the foam to stabilise.
Dispense:
Before serving, shake again. If preparing a foam or using N₂O, hold the siphon upside down. Press the lever with a steady flow to obtain perfectly mixed cocktails that are sparkling or foamy, depending on the gas used.
