Appearance and presentation of the spheres
The spheres will look solid on the outside and liquid on the inside, like a miniature bag containing liquid and the larger they are, the more delicate they are to handle. To enjoy them, you will need to provide your guest with a teaspoon. The spheres withstand heat and cold very well and can be dipped into hot liquids such as tea, coffee, punch or milk.
The solidification process does not stop
The spheres should be used immediately. After a few minutes, they will have a rubbery consistency and begin to lose their flavour. The caviar-sized spheres can be prepared a few minutes in advance.
